{Pinterest Recipe} Low Cal Pumpkin Bread

Anyone have this pinned to their Pinterest Board? 

Well, since I'm making an honest effort to cook healthier dishes, I thought I would give this one a go.  It's just been pinned so much! I think you all know i LOOOOOVE pumpkin anything and with this being low calorie, it was a win, win...yeah? :) 

So here goes!

1-1/2 c. pureed pumpkin
1/2 c. unsweetened applesauce
1 whole egg
3 egg whites ( I used egg whites from an carton - 3 tbsp = 1 egg white)
1 c. all-purpose flour
2/3 c. whole wheat flour
1/2 c. Stevia Cup For Cup sweetener (I used Truvia)
1/2 c. granulated sugar
1 t. baking soda
1/2 t. ground cinnamon
1/2 t. ground nutmeg

Cream filling
8 oz. reduced fat cream cheese ( I used fat free and couldn't even tell)
1/4 c. granulated sugar
1 T. all-purpose flour
2 egg whites
1 t. vanilla extract

*Preheat Oven for 350

You'll mix the pumpkin, applesauce, egg, egg whites in a bowl with an electric mixer.  In a seperate bowl, you'll mix the flours, Stevia, sugar, baking soda, cinnamon, nutmeg.  Then slowly mix in the dry ingredients into the pumpkin mixture.

For the filling, just mix all the filling ingredients together with a mixer until creamy and smooth.

Instead of a loaf pan, I used a muffin pan.  If you want to use a loaf pan, grease 2 8x4x2" loaf pans.

Divide half of the batter between the two pans. Pour half of the filling in one pan and the other half in the second pan and smooth with the back of a spoon. Top with the remaining batter.

Mmmmmm...these came out sooooo tasty.

If you love pumpkin as much as I do and you're feeling a little bad, I really recommend this pumpkin spice butter to put on top while the bread is still hot. GOD - BLESS - AMERICA It was SO SO delicious.
