3 Apples, diced (I used Fuji Apples - The Best)
1 cup of STEEL CUT Oatmeal
1 cup of Apple Juice
3 cups of Water
1/2 - 1 tsp of cinnamon (optional)
On her blog, she says for best results, combine all ingredients in a crock pot and cook for 2-4 hours on high or 4-6 hours on low stirring occasionally. I had to leave mine in for about 8 hours (sleeeeeeping), so she said to add one more cup of water so it doesn't dry out.
You could also add pecans or drizzle some low fat maple syrup on it.
*You have to use Steel Cut oatmeal - it's a heartier cut grain, so it won't get super mushy. Just FYI :)
If you go to her blog, there are directions on how to cook it on your stove top as well.
I would say the nutritional count to be around 115-175 calories per serving (depending on the size of your bowl - :) . 1/4 cup of steel cut oatmeal is 150 calories and that is what is considered a serving size on the back of the box - then you factor in apples. Either way, it is still a hearty breakfast and it's good. I added a pack of splenda to mine and it was De-Lish!
