Skinny Crockpot Chicken Taco Chili and a Little Something For Your Sweet Tooth

You've probably noticed my quest for skinny recipes that taste good.  This biggest loser competition at work was probably the kick in the pants I needed to lose some weight. I think it also helps that it IS a competition and we're all kind of counting on each other...you know, for 5 more weeks :)

So I went on my new favorite site for low fat/cal recipes - www.skinnytaste.com in search for something good and quick. 

Crockpot Chicken Taco Chili!  It took 5 minutes to prepare and then just wait until it's done.  I LOVE crockpot recipes.

What You'll Need:


3-4 chicken breasts
1 can of black beans
1 can of kidney beans
1 onion, chopped
1 package of taco seasoning
1 tbsp of chili powder
1 tbsp of cumin
1 8oz can of tomato sauce
2 cans of rotel
*I also added maybe about a 1/4 cup of low sodium/fat free chicken stock to give it a little more broth - totally up to you.


You will combine all your ingredients and put them in your crockpot.  Place your chicken breasts on top.  You don't even have to thaw your chicken out!  How awesome is that?!

I set my crockpot on LOW/10 hours.  Don't worry it doesn't take 10 hours.  About 3 hours later, I checked on my chicken ( who wants dried out chicken?  The worst)  It was just right.  If your chicken is already thawed when you put it in, I would check on it sooner.  I took the chicken out to shred it and then placed the shredded pieces back in the crockpot.  Since this was for dinner, I set the crockpot on WARM


How good does that look?  It was De-Lish!  I put the chili on top of 1 cup of brown rice.  I found some steamable bags of brown rice in the frozen food section.  It tasted pretty good.  We all know I have an unhealthy addiction to white rice, but brown rice is about 75 calories less and better for you.

 
The recipe suggested topping it with some cilantro, so I did.  It really gave it a nice contrast in taste. 

Grand total per serving (1 1/4 cup)

Calories 203.7
Fat 1.4g
Protein 16.9g
Carbs 33.3g
Fiber 10.0g

ALSO, if you have a sweet tooth instead of reaching for the icecream maybe try this.

It's fat free frozen cool whip (25 calories per serving) and frozen fruit (any kind you like)

75 calories / 0 fat :)

Happy {belated} Birthday to my Momma

Well, I say belated, but just a belated blog.  I'm pretty sure my mom wouldn't let me live down the year I forgot her birthday, so I mark it in my phone, my planner (yes I still carry one), and my trusty dad always calls to remind me. 

Me: Hi DaD

Dad: Hey just callin' to..

Me:  Yes, I know mom's birthday is in a couple of days.

Dad:  Ok, just calling to remind you.

Me: Thanks Dad

I know everyone thinks their mom is the best, but it really didn't take until I became a mom to realize how much my mom sacrificed while I was growing up. 

Top Reasons I Admire My Mother:

1.  She married an American man when marrying outside your race was REALLY not accepted.

2.  She left everything she knew in Korea with 2 kids under the age of 5, one with severe special needs, and started a new life with my dad in the States. 

3.  She studied and became a U.S. citizen




4.  She managed daily life in a foreign country, speaking a foreign language while my dad was off doing military duties.

5.  Most of all though, for 24 years she took care of my brother with multiple special needs with her whole heart without complaint.    She gave him the best life while he was here with us and it is only because of her and my dad that he lived as long as he did.  


My mom epitomizes actions speak louder than words.  I watched her always carry herself with grace and that is how I try to carry myself.  She is the one that told me not to judge others...you don't know what they may be going through in their lives, so it's not my place to throw stones. 


I could go on and on about why I think my mom is amazing, but I tend to get all emotional, so I'll stop here.  Happy birthday mom!!  You have and always will mean the world to me.

{Pinterest Recipe} Crockpot Apple Pie Oatmeal

Another Pinterest recipe from the blog Cooking with Jax


Ingredients:

3 Apples, diced (I used Fuji Apples - The Best)
1 cup of STEEL CUT Oatmeal
1 cup of Apple Juice
3 cups of Water
1/2 - 1 tsp of cinnamon (optional)

On her blog, she says for best results, combine all ingredients in a crock pot and cook for 2-4 hours on high or 4-6 hours on low stirring occasionally.  I had to leave mine in for about 8 hours (sleeeeeeping), so she said to add one more cup of water so it doesn't dry out. 

You could also add pecans or drizzle some low fat maple syrup on it. 

*You have to use Steel Cut oatmeal - it's a heartier cut grain, so it won't get super mushy.  Just FYI :)

If you go to her blog, there are directions on how to cook it on your stove top as well. 

I would say the nutritional count to be around 115-175 calories per serving (depending on the size of your bowl - :) .  1/4 cup of steel cut oatmeal is 150 calories and that is what is considered a serving size on the back of the box - then you factor in apples.  Either way, it is still a hearty breakfast and it's good.  I added a pack of splenda to mine and it was De-Lish!

{Pinterest Recipe} Crockpot BBQ Chicken

I've been on this quest to find GOOD low fat / low calorie recipes.  Eating right can run it's course when you're tired of Subway and don't know what to cook.  As a full time working mom, it's nice to find a recipe that's quick, healthy, and tasty.  My friend Jenny tried this recipe, so I pinned it to make sure I would remember to try it. 

Ingredients:

3-4 Pieces of Chicken Breasts
1 bottle of your favorite BBQ Sauce (Head Country is THE BEST)
1/4 cup Vinegar
1/3 cup Brown Sugar
1 tsp Garlic Powder
1 tsp Red Pepper Flakes






I set my crockpot on the LOWEST setting of 10 hours.  It took 3 hours for 4 chicken breasts to cook.  How easy is this recipe?!



 This was so easy and tasty.  The sauce adds just enough BBQ taste without all the calories/fat :)  My husband is one of the pickiest eaters I know and he l-o-v-e-d it.

Liebster Love

Over the weekend, Carolina from Coisas de Carolina surprised me with The Liebster Award!

I'm always surprised anyone actually takes time out of their day to read my blog, but I think it's so neat that I have International readers :)  Oooooh, I know right? Carolina is originally from Brazil, but currently resides in Sweden.  She's a mom and wife and like most of us bloggers she posts about her daily life and all things Carolina.                                  
Part of the liebster award is that it is given by small bloggers (less than 300 followers), and then in turn you give it to 2-5 small blogs(less than 300 followers) that you read. you link back to your awarder and awardee and in turn makes a big chain of blogs you could follow that you might have never read. kinda fun, huh?

Subway Breads - Wheat or White? I wouldn't be so sure...

I think we all agree that when we decide to eat better, one of the first healthy decisions we make for ourselves is switching from white to wheat bread - it's usually lower in calories and fat and it has more nutrients, but does that hold true 100% of the time? 

I went to the Subway nutrition website to look at the calorie count of a few things and I noticed....


Granted, wheat bread still holds more calcium and iron than the sourdough, but as far as sugars and sodium the sourdough is less.  They have the same amount of calories.  Even if you compare the wheat with the Italian "white" bread, the white bread has less calories, same amount of fat, less sodium, less carbohydrates, same amount of sugar, calcium and iron! 

So, I went to the ingredients and the #1 ingredient in both wheat and white bread is enriched wheat flour. Soooo...when I go to Subway would it be Healthier if I choose the white bread?

{Pinterest Projects} Skinny Taco Soup
























So, like I said in my last post, I joined the biggest loser challenge at my work.  I haven't been motivated AT ALL in the last 4 months to do anything that might cause me to break a sweat, so I thought if I joined a team of people counting on me to lose some weight it would motivate me.

I found this recipe on www.skinnytaste.com via Pinterest. It's only 198 calories per serving~!


 Turkey Chili Taco Soup
Gina's Weight Watcher Recipes 
  • 1.3 lbs 99% lean ground turkey
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 10 oz can rotel tomatoes with green chilies
  • 15 oz canned or frozen corn, drained
  • 15 oz kidney beans, drained
  • 8 oz tomato sauce
  • 16 oz fat free refried beans
  • 1 packet taco seasoning (you can use 40& less sodium)
  • 2 1/2 cups fat free low sodium chicken broth
In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes.

Verdict:  De-Lish!  Taco soup normally is a little greasy due to the beef, but this one tasted a lot healthier.  Definitely a keeper.

I've really been interested in collecting some retro/vintage camera's...I thought when we eventually move, they will make for some fun decoration.  My darling husband helped me get started.

Auntie Anne's Bake @ Home Pretzels - #1348 why I'm Fat!

Ha! Well, it could be the lack of self control, but whatever.  Did I mention I joined The Biggest Loser challenge at work??? I thought before the challege begins, I should probably bake these now.  You understand my logic right???  For my BL teammates, don't you judge me!



So these are probably the ugliest pretzels ever made...did you know you dip them in baking soda water before you bake them?

More Sangria Please! + New Years Eve 2011 Recap

New years eve went down like this.  Since we didn't have a babysitter, we invited our friends Chris and Casey over (whom also did not have a sitter) for some parental partying.  For all the single ladies and men out there, that means wait till the kiddo's fall asleep then crack open the wine and/or fruity beverage, and get down with some Dance Central on the Kinect :)  Which by the way is SO much fun. 

Let's start off with this AMAZING sangria I made shall we?  After perusing sangria pins on pinterest and googling the most popular sangria recipes, I ended up using Emeril's recipe from the Food Network, but with a few modifications....you know, since I bought the BIG bottle of wine I had to make some adjustments.  So, I will give you my tweaked recipe....I will call it More Sangria Please!  You know, for those nights you need a lot of sangria, like a party of something...so what if the party is for 2!?


This picture made me laugh for 2 reasons: 1.  Christian REALLY wanted that orange and 2. Because he's jacking it from my mixed Alcoholic beverage photo.

You will need:
(1) Big bottle of red wine {I used a Merlot 1.5L}
(1/2 cup) Rum or Brandy {I used a silver rum}
(1/4 - 1/2 cup) Orange Liqueur {I used Triple Sec}
(4 tbsp)Fresh Orange Juice {I used a little more}
(4 tbsp) Fresh Lemon Juice
(1/2 cup) Sugar
2 Oranges, sliced
1-2 Lemons, sliced
Frozen Fruit (i.e. sliced strawberries, peaches, berries)
(1 bottle) Ginger Ale or Club Soda or Sparkling Water {I used ginger ale, tasted more like Sangria to me, but I'm just letting you know you have options :)}

*If you are using a regular bottle of wine (750ml) cut everything in 1/2!*
So, I couldn't find our new fangled cork popper, so I found this one in the drawer.  What do ya know, it still works...



Like I said, this recipe calls for the large bottle of wine - 1.5 Liters (versus the regular bottle of wine 750ml, so double)

So, I added 2 sliced oranges and 1 sliced lemon


Lookin' good right? 
Then you need to take a kitchen spoon and muddle the fruit to release the flavor.  Also at this point, add your sugar, Rum/Brandy, Orange Liqueur, orange and lemon juice.  After you've combined everything, put in the frig to chill until it's time to serve....at least 3-4 hours. 
Now normally you would add your ginger ale to the pitcher (or club soda if you're trying to save some calories, but seriously?) but since I bought such a big bottle, there was no more room in my pitcher.  Kinda sad I know.  SO, what I did was fill my glass 1/4 of ginger ale and then poured in the sangria mix.  Also, I used frozen sliced strawberries and peaches for extra flavor and they keep your drink cold!  Yum.


There's nothing like having a drink with a great friend.

I did get to celebrate with my kiddo for a little while before his bedtime.  We've had so much fun this weekend being silly and spending time together.  I sure feel blessed he's in my life. 


Little Miss Avery partied with us up until her bedtime as well :)  She's so stinkin' cute~!  Ha!  It's the first time Christian's had a girl in his room, lol.

You wondering where the men are in these photos?  They were playing Wipeout on the Kinect or watching Big Bang.  I should photograph the men more, but I've noticed they're not that into it :) 

2011 was a great year for us.  Matt and I celebrated our 3 year anniversary and Christian turned 1.  We've experienced all those milestones like crawling, walking, first words, etc.  They mean so much to me.  I feel blessed for the amazing husband I have and my wild child :)  My friends are seriously a God send and my life would not be the same without them.  Most of all, the ones I love are in good health...and that is more important than anything.  If you don't have your health, what do ya got? I can't wait to see what 2012 has in store for us.  Whether it's good or bad, my foundation is strong and my friends and family hold me up, so I feel I am able to get through anything.  Remember, you have ONE life...one life to make an impression.  You make the decision on how you want to be remembered.
